Garlic Prawn Konjac Noodles

Ingredients
1 packet ZERO Konjac Noodles
300g raw prawns, peeled and deveined
2 garlic cloves, finely chopped
1 tablespoon olive oil
1 small red chilli, thinly sliced
1 tablespoon gluten-free soy sauce or tamari
1 teaspoon sesame oil
1 teaspoon fresh lime juice
1 small capsicum, thinly sliced
1 cup snow peas or green beans
2 spring onions, sliced
Fresh coriander, to serve
Lime wedges, to serve
Sesame seeds, optional
Method
Drain the Konjac Noodles and rinse thoroughly under cold running water. Pat dry, then place in a hot, dry frying pan for 1–2 minutes to remove excess moisture. Set aside.
Heat the olive oil in a large frying pan or wok over medium-high heat.
Add the prawns and cook for 1–2 minutes on each side, until just pink and cooked through. Remove from the pan.
Add the garlic, chilli, capsicum and snow peas. Stir-fry for 2–3 minutes until lightly tender.
Return the prawns to the pan and add the Konjac Noodles, soy sauce, sesame oil and lime juice.
Toss everything together for 1–2 minutes until well combined and heated through.
Divide between bowls and garnish with spring onion, coriander, sesame seeds and lime wedges.
Serving suggestion: Add extra chilli, grated ginger or a splash of fish sauce for a stronger Asian-style flavour.
